Carrot Slaw

Putting dinner on the table during the darker months of the year always seems to be a rushed endeavor.

In the summer months when the sun is high well into the evening, and everyone is outside playing, I can move about the kitchen freely and holler for my family to come in when I’m ready for them. But now, it’s dark so soon after the kids get home from school that they are inside (often at the kitchen table doing their homework,) when it’s time to prepare the evening meal. The older ones often have things they need to hurry off to as soon as dinner is over and the younger ones need baths and bedtime routines. Can anyone relate?

I’ve got a few hacks to get a balanced meal on the table in a jiffy, and one of them is my mom’s carrot slaw.

Ingredients:

  • 3 large carrots, peeled and grated (about 3 cups)

  • 1 teaspoon apple cider vinegar

  • 1/2 cup raisins or dried cranberries (craisins)

  • 1/2 cup mayonnaise

  • 1 teaspoon salt

  • 1 Tablespoon sugar

  • (optional) chopped walnuts, pecans, or sunflower seeds

Directions:

  1. Peel and grate carrots,

  2. Place in large bowl and toss with vinegar.

  3. Add remaining ingredients and mix well.

  4. Serve immediately or refrigerate.

This comes together in a jiffy with ingredients most of us have on hand. It’s colorful and textural, a few things kids always seem to like, and it’s tasty!

Toss it together for a perfect pairing to roast beef or a roasted chicken, pork chops or round steak. (My folks used to tell me eating carrots would help me see in the dark… maybe that will help entice a little that is hesitant to try new foods.)

Some days are better than others, and the day I sat down with a legend in the music industry, Clive Davis, was a very good day indeed!

Clive, who founded Arista Records, has been bringing hits to the airwaves for over 50 years. It was he who suggested to a young Barry Manilow that he should record "Mandy", and we all know how that went! Clive, nearly 94, and Barry, nearly 83, have teamed up once again to bring us one more hit.

Spring Craft | "Bunny Bait"

Here’s a clever little spring craft using wood shims, some glue, paint, and a little faux greenery.

Make yourself a cute bundle of carrots that won’t go bad even if you forget to put them in the root cellar come fall!

Display them on your table - or wherever you think they may work to attract an Easter Bunny delivering baskets full of decorated eggs, chocolate candies, and marshmallow peeps!

Supplies:

  • 1 package of wood shims (12 count)

  • White (school) glue, wood glue, or hot glue

  • Rubber bands

  • Craft paint

  • Faux greenery

  • 3 small nails or tacks

  • Twine or Ribbon


The beauty of this craft is that after you get your shims and greenery, you can use whatever you have on hand to pull the project together. The crafter that shared this with me says she had everything (including the shims) in her craft or home supplies but encourages everyone to put their own spin on things. Pastel, polka dot, or striped carrots? Yes! Make them your own!

Steps:

  1. Begin by gluing four (4) shims together to make a “carrot” shape - wide portion of the shim at one end, narrow portion at the other. If you’re using a liquid glue, bind your carrot together with rubber bands or other binding until it dries. Repeat using all 12 shims to make 3 carrots.

  2. Paint your carrots. Follow your own style sense here. Make ‘em traditional, modern, or whimsical. You’re in charge.

  3. Add some carrot “tops”. One Dollar Tree sprig of greenery was sufficient for the 3 carrots pictured. Maybe you’d like to use dried grasses or other foliage? Again, you’re the boss.

  4. Attached the tops either with hot glue, a short nail, or a long tack - however you can get them to stay in place.

  5. Tie some twine or ribbon at the top if you’d like. (If you don’t want to, you don’t have to!)

  6. Display and wait for Easter morning to see if Peter Cottontail took the bait!

Cinnamon-Applesauce Hearts (Repost)

Years ago, my mom delivered a Valentine's package with a deliciously scented heart ornament dangling from the bow.

It was a cinnamon heart, strung with a satin ribbon - and even after the scent had gone, it hung from a kitchen cabinet handle for many more years delighting me with fond memories.

This old recipe, requiring only two ingredients - ground cinnamon and applesauce - might traditionally be used to make Christmas ornaments, but since my mom pressed it into heart shapes, in my mind, it's best suited to Valentine decor.

You won’t believe the incredible cinnamon smell that fills your home while these are baking - and how lovely it will be for days (weeks) to come when you walk into a room where one of them is on display!

Cinnamon can be expensive if purchased in those tiny containers at the grocery, but if you have a big-box store like Costco, WinCo or Cash & Carry nearby, you can pick it up a large container relatively inexpensively. Increase or decrease the recipe depending on how many hearts you want to make, using a 1:1 ratio.

Ingredients:
(makes about a dozen cookie cutter hearts)

  • 1 cup Cinnamon

  • 1 cup Applesauce

  • Thin ribbon or twine

Instructions:

  1. Thoroughly mix the cinnamon and applesauce together in bowl. It should have a thick, paste-like consistency and hold together well - not too dry, not too wet.

  2. Place between two pieces of parchment or waxed paper, and roll out to about a 1/4 inch thickness. It will break if too thin, and will take longer to bake if too thick.

  3. Take the top layer of paper off and use cookie cutters to cut into shape.

  4. Use toothpicks to decorate and a straw to make the hole for hanging.

  5. Move hearts onto a cookie sheet.

  6. Bake at 200 degrees for about two and a half hours, until they feel dry and hard.

  7. Once cooled, thread ribbon or twine through the hole and make a loop.

Dangle from a Valentine’s package, gift a grandparent, teacher, friend, or hang in your home for some Valentine’s love, some winter cheer, and a fantastic cinnamon scent!

And yes, go ahead and use the recipe during other seasons and cut out other shapes - acorns and leaves in the fall, snowmen and snowflakes for your Christmas tree… it’s all fair game!

Classic Salt Dough & Air Dry Clay Recipes

I grew up in a household where nearly everything was “home made.” My parents would see something in a shop or on TV and if it interested them, they’d think - or often say aloud - “I coud do that.” and they did it.

Sometimes this wasn’t cool with my little self. I often yearned for store-bought branded items… But now I am so grateful to them for passing on a CAN DO lifestyle to me, modeling resourcefulness, ingenuity, and enthusiasm for creating a life one might want for themselves.

That’s a lofty introduction for a subject as humble as air-dry clay, but this is where it all starts! Not everything has to come from a big delivery company! Make some clay for yourself or your kiddos and get started on your own creative life!

1. Baking Soda & Cornstarch Air Dry Clay:

This recipe is favored for being inexpensive, easy to work with, and drying to a crisp white finish.

  • Ingredients

    • 1 cup Cornstarch

    • 2 cups Baking Soda

    • 1.25 to 1.5 cups Water

  • Instructions:

    1. Mix: Combine all ingredients in a saucepan over medium heat.

    2. Cook: Stir continuously until the mixture thickens into a mashed potato consistency.

    3. Cool: Remove from heat, place in a bowl, and cover with a damp cloth until it reaches room temperature.

    4. Knead: Knead until smooth.

2. Glue & Cornstarch Cold Porcelain Clay:

This recipe is great for making small, detailed figures as it is very smooth and durable.

  • Ingredients:

    • 1 cup White PVA glue (e.g., Elmer's)

    • 1 cup Cornstarch

    • 1 tbsp Lemon juice or White vinegar (preservative)

    • 1 tbsp Mineral oil or Baby oil

  • Instructions:

    1. Mix: Combine all ingredients in a microwave-safe bowl until smooth.

    2. Heat: Microwave in 30-second intervals, stirring in between, until it forms a dough.

    3. Knead: Knead while warm until smooth.

3. Classic Salt Dough:

A simple, classic option perfect for children's crafts.

  • Ingredients:

    • 2 cups Flour

    • 1 cup Salt

    • 3/4 cup to 1 cup Warm Water

  • Instructions:

    1. Mix: Combine flour and salt.

    2. Combine: Gradually add water while stirring.

    3. Knead: Knead for about 5 minutes until smooth and pliable.

Tips for Success

  • Drying Time: Let creations air-dry for 24–48 hours, or up to 3–5 days for thicker items.

  • Storage: Store unused clay in an airtight container for up to 2 weeks.

  • Cracking: If the clay is too dry, add a small amount of water or lotion.

  • Coloring: You can add food coloring or acrylic paint during the kneading process to dye the clay.

  • Durability: To make the clay stronger, you can mix in a little PVA glue.

Hearts a-Flutter | Valentine Craft

Saw the cutest little craft the other day, and had to share it with you! I’m sure you’ll be a fan, just as I am. It’s sooo simple and has my heart all a-flutter.

Make yourself some of these adorable little accordion hearts, and hang them wherever you want to spread a little love!

It all starts with a simple circle of paper. The ones in this example are made using an 8.5” and a 6” wide bowl for templates. And old tattered book of children’s music provided some of the paper, and craft paper was used for the rest.

Materials needed:

  • Paper

  • Pen

  • Scissors

  • Scotch Tape

  • Twine or Ribbon for hanging

Instructions:

  • Draw a circle on a sheet of paper and cut out.

  • Fold the circle in half, then unfold. Fold the outside edges inward to the center fold, and crease.

  • Now fold those outside edges in to the center once and twice again and crease. Unfold. You should end up with a circle that has uniform creases from one side to the other.

  • Beginning at one side, fold along the creases in a back and forth, accordian style until the entire circle has been folded.

  • Now fold in half, pinching at the fold to form pointed bottom, and fanning the tops to form a heart shape.

  • Tape the middle of the accordion together where it meets, toward the bottom, preserving the top ridges .

  • Include a looped piece of twine or ribbon under the tape for hanging.

Tasty Lentil Coconut Curry (Repost)

Whole grains and legumes are packed with fiber and nutrients. I love cooking with them and serving them up to my family, but sometimes I get stuck in a rut. Does this sound like you?

That’s why I was excited when a friend brought over this super yummy lentil coconut curry dish for us to try.

It’s packed full of fresh ingredients, flavor, and fiber, and it was oh-so filling!

A perfect dish to try on a “Meatless Monday,” if you’re into that. I really enjoyed the leftovers as they seemed to be even more flavorful after all the spices and ingredients had a chance to hang out together over-night in my fridge.

ps - I added a “Supercheat” if you are more like me than we sometimes want to admit, and find yourself long on intention, but short on time or patience… scroll to the bottom for my suggestion.

Lentil Coconut Curry

Ingredients:

  • 3 tablespoons coconut oil

  • 1 full head of garlic, chopped

  • 1 16-ounce can of diced tomatoes

  • 2 tablespoons freshly grated ginger

  • 1 tablespoon turmeric powder

  • 1 tablespoon ground cumin

  • 1 teaspoon cayenne pepper

  • 2 teaspoons sea salt

  • 1 cup dried lentils

  •  3 cups of water

  • 1 13-ounce can of coconut milk 

  • 1 cup chopped fresh cilantro

Instructions:

  1. Using a large pot or skillet, saute’ chopped garlic in coconut oil over medium-high heat until softened and a bit browned. 2-3 minutes

  2. Add diced tomatoes, grated ginger, cumin, turmeric, and sea salt. Cook for 5 minutes, stirring the mixture so that it heats evenly and does not stick to bottom of pot.

  3. Add the water, dry lentils, and the cayenne pepper to the pot and bring it to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes or until the lentils are cooked and have softened. Stir a few times so nothing sticks to the bottom of the pot.

  4. Once mixture has thickened, and the lentils are soft, add the coconut milk and bring the pot back to simmer for a few minutes.

  5. Stir in chopped fresh cilantro before serving over basmati or jasmine rice.

Supercheat:
Use a can of diced tomatoes, a can (or two) of lentils, a couple large dollops of curry paste, a can of coconut milk, and finish off with fresh cilantro. No, it won’t be as good, but it will still be yummy, warm, and filling!

Grilled Beef Skewers

Cruising through my recipes looking for some fun dinner ideas while the kids are home over the winter break and stumbled on this yummy one for grilled steak skewers. The secret is in the marinade. Mmmm.

Fun fact, anything served on a stick is “fun” food - even when it’s far more delicious and nutritious than a corn dog!

(Although, I’m no snob, I do love me a corn dog every now and then!)

My hubby firmly believes grilling is a 12 month activity, and I have to agree that the eatin’ is good for any reason and any season, though you could just as easily put these threaded beauties under the oven broiler.

If you’re looking for something the kids will love, try this!

Marinade Ingredients:

  • 1 cup soy sauce

  • 1 cup water

  • ½ cup olive oil

  • ⅓ cup red wine vinegar

  • ¼ cup Worcestershire sauce

  • 1 tablespoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon black pepper

  • 2 tablespoons brown sugar or honey

    Optional:

  • ½ teaspoon liquid smoke (optional, for an enhanced smoky flavor)

  • Pinch of cayenne pepper or hot pepper sauce (optional)

Marinade Instructions:

  1. Combine all ingredients in a jar or a medium bowl.

  2. Whisk or shake vigorously until the ingredients are well mixed and the oil and water are somewhat emulsified.

  3. If you make ahead, store the unused marinade in an airtight container in the refrigerator for up to a week. 

Beef Skewer Ingredients:

  • 2 lbs sirloin steak (thick cut), cut into 1-1.5” inch pieces, marinated

  • 3 bell peppers (1 red, 1 green, 1 yellow) cut into same sized pieces

  • 1 large red onion cut into chunks the same size as steak and peppers

  • Olive oil

  • Salt & Pepper

  • Garlic powder

  • 10 wooden skewer sticks soaked in water for at least 30 minutes

Beef Skewer Instructions:

  1. Place steak cubes into a gallon size zip bag with marinade. Press out any trapped air and seal bag. Massage marinade into cubes for about a minute, then place bag in refridgerator.

  2. Marinate for at least 30 minutes, but for maximum flavor penetration, aim for 2 to 6 hours in the refrigerator. Avoid marinating for much longer, as the acid can change the texture of the meat.

  3. Preheat your grill over medium-high heat to about 425 degrees.

  4. With veggies in large bowl, drizzle with oil and lightly toss to coat, then sprinkle with salt, pepper and garlic powder.

  5. Assemble skewers: Layer steak and veggies onto kebabs in desired order, work to fit 4 steak pieces onto each kebab.

  6. Brush grill grates lightly with oil. Place kebabs on grill and grill until center of steak registers about 140 - 145 degrees for medium doneness, turning kebabs occasionally, about 8 - 9 minutes. Serve warm over a bed of rice or pasta.
