Christmas Craft | Spiced Candle in a Jar

Screen Shot 2020-12-02 at 12.37.05 PM.png

My granddaughter, Nadia, is the source of inspiration for this crafty blog post! Her mama, Riely, is an incredible talented maker, and a hands-on kinda mom who’s been doing a terrific job of coming up with interesting and fun home-school activities that reinforce curricula.

Here’s a lovely little project they completed recently that Nadia shared with me. I’m hoping to find a sample of her efforts under my tree on Christmas morning, and think it’s a terrific activity for adults and big kids alike!

It’s super simple, yet oh-so-elegant, and a wonderful way to fill a home with beauty, light, delightful scents, and love - so much goodness in a little canning jar!

(Candle-making kits, like the one shown, can be found in craft-stores and on-line.)

Supplies:

Screen Shot 2020-12-02 at 12.49.38 PM.png
  • soy-based candle wax

  • a melting vessel, stir stick

  • essential oils

  • aromatic herbal tea of your choice
(like Bigelow Tea - one of my 12 Stocking of Christmas Sweepstakes prizes!)

  • small jelly-sized canning jars with lids

  • candle wick & wick tool (a pencil or cooking skewer also works)

  • twine or ribbon for decoration

Directions:

  1. Assemble your supplies

  2. Put down newspaper or craft paper to protect your work space.

  3. Follow package directions to melt the candle wax (a tried and true family method is placing the wax in an old tin can, and placing the can in a pan of boiling water - don’t let the water come up and over the tin can.)

  4. Scoop a few teaspoons of aromatic herbal tea into the melted wax.

  5. Add a few drops of essential oils to the mix - more for lighter scents, less for heavier. Stir well.

  6. Attach a measure of candle wick to your wick tool, (or tie it to a pencil or wooden cooking skewer.) Hanging length should match the height of the jar you are using.

  7. Pour wax into little canning jars, suspend the wick in the center of each, resting the wick tool, pencil or skewer across the top of the jar.

  8. Allow to set.

  9. Release the wick from the tool (pencil/skewer,) and trim to about 1/2 inch above the top of the candle.

  10. Place the lid on the candle, tie a piece of ribbon or string around the jar and label as you wish.

  11. Gift away!

There are so many fabulous albums out right now, including Tori Kelly’s soulful “A Tori Kelly Christmas.” You’ll remember her from this year’s huge collaborative hit,”Together” with for King & Country. Christmas, especially this Christmas, should focus families and making new memories together. I know my family is going to make “The Boy, The Mole, The Fox, and The Horse” a new holiday tradition.

Pick up several copies of the #1 New York Times and USA Today bestseller to wrap up and put under the tree - a collection of illustrations following the journey of a curious boy, a greedy mole, a wary fox, and a wise horse, as they discover universal truths about kindness, hope, friendship and love.

I am so excited to welcome Sir Paul McCartney to my 12 Stockings of Christmas! "McCartney III" will be one of the gifts I add to my stockings this year, of course, it is wonderful! It’s filled with his amazing vocals, but he’s also written all the songs and produced the album too – that is what we call a triple threat!

McCartney_III_Album_Cover.jpg

Completing a trilogy 50 years in the making "McCartney III," will be available EVERYWHERE on December 18th. Just as McCartney’s 1970 release marked Paul’s return to basics in the wake of the Beatles breakup, and the 1980 masterpiece "McCartney II" rose from the ashes of Wings, "McCartney III" finds Paul back on his own, turning unexpected circumstances into a personal snapshot of today’s times.

Like "McCartney" , and "McCartney II" , "McCartney III" is centered around the themes of home, family, and love. In fact, the album comes full circle; Paul’s daughter, Mary McCartney, who was featured as a baby nestled in Paul’s jacket on the cover for the original "McCartney" album, is now grown up and shot the photo used on the cover for "McCartney III."

We’ve all been doing our part sheltering in place, and I am so happy to be sharing the magnificent album "McCartney III" coming from Sir Paul’s own “Rockdown” with you. Make room under your tree and on your gift list for "McCartney III” , available December 18th.

Ozark Chocolate Gravy

thumbnail_Facetune_28-08-2020-20-13-16.jpg

Recently, I found myself reminiscing about my grant-aunt and her chocolate gravy.

Though I was born and raised on the Oregon coast, my mother's family were transplants from the Ozark mountains. And, what they say about taking someone out of the country, but not taking the country out of them, was certainly true in this case.

Farmers turned timber workers, their customs, pronunciations, and foods were still very much reflective of generations of southern living.  While my grandmother for some reason, never cared for (or in her dialect "keered fer”) chocolate gravy, when her sister would visit, one of the first things she'd do is whip up a batch for us kids.

Super sweet and rich, it's not something you'll want every day, but as the temps begin to dip, this southern comfort food might be very welcome some Sunday morning.

Ingredients:

  • 3 tablespoons all-purpose flour

  • ¼ cup baker’s cocoa powder

  • ¾ cup granulated sugar

  • 2 cups milk

  • 1 tablespoon butter, softened

  • 2 teaspoons vanilla

Directions:

  1. In a medium sized saucepan, whisk together flour, cocoa, and sugar.

  2. Pour milk into the mixture and whisk until well blended and smooth.

  3. Cook over medium heat, until thickened (7-10 minutes); stirring frequently so that it doesn’t scorch.

  4. Remove from heat, add butter and vanilla, stir vigorously until butter is melted.

  5. Serve immediately over flaky biscuits, croissants, toast , or ??? your choice!

I like to put some fresh fruit out with this morning treat to help temper the melt-your-teeth sweet richness of it all! Red rip strawberries, thick orange slices, or peach wedges would all be perfect accompaniments.

Greek-Style Baked Cod

cod.jpg

My nephew occasionally likes to flex his culinary muscles and serve up something delicious. Because he was evacuated from his Peace Corp volunteer position in Ecuador when the pandemic hit in March, he’s now living with his mom, and she benefits from his kitchen capers.

Recently he delighted her with this Greek-Style Baked Cod. Served alongside some creamy garlic orzo pasta and roasted cauliflower, it was a 5 star meal that left her bragging for the rest of the week. (We tend to do that about our kids, even when the great feat is making microwave popcorn without setting off the smoke alarm - but in this case it was warranted!)

This recipe calls for you to quickly pan-fry the cod pieces to brown, then place the cast-iron skillet (or other oven-proof cookware) into a hot oven to finish the cooking process. The citrus hits the palate first like a delightful little party, and the cod. light and flaky, is simply delicious! Enjoy!

Greek-Style Baked Cod:

Ingredients:

cod 2.jpg
  • 1.5 lb Cod fillet pieces (4–6 pieces)

  • 2-3 teaspoons of minced garlic (5-6 cloves)

  • 5 tbsp fresh or bottled lime juice

  • 5 tbsp extra virgin olive oil

  • 2 tbsp melted butter

  • 1/3 cup all-purpose flour

  • 1 tsp ground coriander

  • 3/4 tsp sweet paprika

  • 3/4 tsp ground cumin

  • 3/4 tsp salt

  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 400 degrees F.

  2. Mix lime juice, olive oil, and melted butter in a shallow bowl - set aside.

  3. Mix flour, spices, salt and pepper in another bowl - set aside.

  4. Dip fish in the lime and oil/butter, then dredge in flour mixture. Shake off excess flour. SAVE THE LIME JUICE MIX!!!

  5. Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat. Place fish in hot oil, browning each side, but stopping shy of cooking through. Remove from heat.

  6. Add minced garlic to the lime juice mix and pour over the cod pieces.

  7. Place skillet with cod in preheated oven. Bake about 10 minutes. The fish should flake easily.

  8. Garnish with parsley or cilantro if desired.

  9. Serve immediately with sides of choice!

Companies That Care

Screen Shot 2020-07-09 at 7.57.07 PM.png

I am so very fortunate to have a number of show sponsors with truly good and generous hearts.

The world-wide coronavirus pandemic has affected us all, but some are in more vulnerable positions than others. I’d like to give these three companies a well deserved shout-out for looking beyond profit, reaching out a helping hand, and lifting people in ways big and small, today and every day.

Balsam Hill has been a passionate supporter not only of Point Hope, but of other caring programs as well, such as Operation Smile, a non-profit that provides surgeries for children in third world countries with cleft lips or palettes. Most recently, they’ve used their distribution warehouses to help provide food provisions to customers in need during the current pandemic and donated all profits back to local food banks.

Balsam Hill is celebrating Christmas in July all month long with the launch of their newly redesigned Fraser Fir Christmas tree! This is Balsam Hill's most realistic artificial tree yet with the shape, color, tips and silhouette more true to nature than any other. Eyes of Faith has brought purpose, passion, and style to the eyewear industry and optical community since 2009.  Dedicated to the idea of giving the gift of sight through mission work, and reflecting the love of Christ in the optical marketplace, a portion of every Eyes of Faith purchase supports Christian missions that provide new prescription glasses, readers, and sunglasses to people in need domestically and internationally.

I was delighted to team with Eyes of Faith on the design of some beautiful eyeglass frames, that when purchased, help to build homes for orphans at Point Hope Village in Ghana, Africa! While the pandemic and resulting shut-down of retail operations has resulted in a significant impact on 2020 sales, Eyes of Faith is still halfway to building another home at Point Hope!

In addition, when Plano Vision Center, one of Chicago's oldest vision care centers, was damaged and looted, Eyes of Faith donated frames that helped them to stay open and continue serving the community.

Recipe | Sourdough Starter

94093361_260533318327392_7801943565042450432_n.jpg

I am so blessed to have a number of nieces and nephews, now grown into remarkable young men and women, that brighten my life in countless ways. One such niecey, Laurel, is a newly-wed living in Chicago and working from home like so many of us during these times.

Laurel is bright, beautiful, and always takes actions based on intent. Recently she shared her ambitious quarantine activity of creating her own sourdough starter, and the resulting loaf of bread she made with it made my mouth water!

In Laurels own words - here’s how she approached the project:

“Very thrilled with my first sourdough loaf!!

Everyone says baking is a science and an art, which are two things that are not necessarily my specialities (especially science). However, I've spent the last eight days creating a starter from scratch, sticking to a feeding schedule, and being amazed at its growth and change.

Many blogs said it would take between 5-14 days for my starter to be ready. Given my past experience with baking, I had prepared for the long haul and unsure if it would even work. When my starter was ready on day 6/7, I was shocked!

And through the 30 hour process of baking this loaf, I was filled with hopes, expectations, fears, and curiosity at each step.

I know this season of life is crazy. But it too is filled with hopes, expectations, fears, frustrations, and more. My situation is so different than yours, but I hope that even though none of us know how long this will take, I pray that it hits the short end of the range, just like my starter did. And if it doesn't, I pray you can still see change, growth, progress, and find joy in it. And still, if not that--if your starter dies or your bread burns or turns out horrible--I pray that you can begin again.”

93973005_666464630782893_8755413166449491968_n.jpg

Remember how bright and beautiful I said she was??? Yep! Now you know what I’m talking about! If you don’t have a friend like I do that will share a bit of their starter with you, here’s what you need to do to create your own!

94259240_680939579361076_6743495041546715136_n.jpg

Sourdough Starter Recipe

Ingredients:

To begin the starter -

  • 1 cup whole wheat flour

  • 1/2 cup cool water

To “feed” the starter:

  • scant 1 cup Unbleached All-Purpose Flour

  • 1/2 cup room-temperature water

Instructions:

94128214_267457794650751_4311055251353370624_n.jpg
  1. Day 1: Combine the whole wheat flour with the cool water in a glass, crockery, stainless steel, or food-grade plastic container; a quart jar works perfectly!

  2. Mix everything thoroughly - If you put a lid on tightly and shake vigorously, this works too. Make sure there's no dry flour anywhere. Cover the container loosely and let the mixture sit at warm room temperature (about 70°F) for a full 24 hours.

  3. Day 2:  First things first, discard half of your mixture whether you see any activity or not (something is happening, trust me.)

  4. Now add a scant 1 cup Unbleached All-Purpose Flour, and 1/2 cup water.

  5. Mix well, cover loosely and let it set at room temperature for another 24 hours.

  6. Day 3: By now you’ll probably see fermentation happening - bubbling, expansion, etc. Now your “baby” is big enough to need twice-daily feedings.

  7. First, stir the starter thoroughly, then discard all but a generous 1/2 cup.

  8. Next, add another scant 1 cup Unbleached All-Purpose Flour, and 1/2 cup water to the starter. Mix starter, flour, and water, cover loosely, and let the mixture rest at room temperature until the next feeding (at least 8 hours/ideally 12 before repeating.)

  9. Day 4: Stir, then again measure out your generous 1/2 cup of starter that you will keep, discarding the rest.

  10. Feed, wait 8-12 hours and repeat the measuring, discarding, feeding step two more times.

  11. Day 5:  At the end of this day, your starter should be at least twice the size it was in the beginning, there should be lots and lots of bubbles, and it should smell fresh and tangy.

If this isn’t what you’re seeing, repeat the measuring, discarding, feeding steps every 12 hours for 2-3 more days.

  12. Measure, discard, and feed one last time, then let rest for 6-8 hours.

  13. Follow the directions on your recipes of choice, using the amount of starter necessary.

(It shouldn’t be more than about 1 cup.)

  14. Find a crock or jar use for storing your 1/2 cup of starter long-term. The top should be secure enough to prevent spilling, but loose enough to allow air flow (to keep the cultures alive.) Store in the refrigerator.

  15. Feed it once a week or more often if you are using frequently.

I hope your experiment goes splendidly and you are baking and making with your sourdough starter soon! What will you make?

Mother's Day Musts

Screen Shot 2020-04-16 at 8.39.34 PM.png

There are many things to celebrate in the magical month of May, but none so splendid as Mother’s Day, the true (if I may say) Queen of the May!

Mother’s Day was always a special event when I was growing up; we celebrated with a multi-generational big Sunday brunch with either ham, turkey, or roast beef, sides, salads, and my Grandma’s home-made rolls. The flowers in bloom on the Oregon Coast by mid-May were enough to provide a handful of blossoms - azalea, forget-me-not’s, camilla and long-stemmed dandelions of course!. With a bouquet on the table and many hand-made cards on the mantle, we felt properly outfitted for the occasion.,

This Mother’s Day, many of us will return to the simpler ways that we look back on so fondly. And while I ALWAYS encourage hand-picked posies and Crayola colored cards, thanks to some of my incredible sponsors, I can recommend some more options for you - all available by order and delivered right to your mother’s door.

Free-range chickens we are not these days! Mother hens and chicks alike are cooped up more than we’d like. But in between impromptu bouts of the chicken dance, we can read to while away the hours and immerse ourselves in alternate narratives of time and space. Recommendations? Oh yes!

GROWING GRATEFUL

In Growing Grateful, which is absolutely perfect for the situation we find ourselves to be in, Mary A. Kassian offers 101 meditations on the joy of being grateful even in the hardest times.

Each entry contains a Bible verse, a devotion on gratitude, and a reflection question. Learn how to be:

• Grateful for God’s abiding presence.
• Grateful despite your circumstances.
• Grateful that God wants you to flourish.

I discovered long ago, that happiness, contentedness, and joy are all “inside jobs.” If we wait for someone or something to fulfill us, we will be perpetually disappointed, sad, or angry even. The secret (which isn’t so secret, but often illusive) is the ability to recognize and cultivate gratitude.

Growing Grateful is a lovely, generous, and forgiving, assistant to help you on your journey to gratefullness - and a cheerful companion once you’ve arrived.

DAWGS

My book club pick for April, DAWGS, by Diane Trull is the story of how a 4th grade reading class, called to action by a newspaper photo of a box of puppies in need of homes, started an animal shelter in their town of Dalhart, Texas.

Those with a heart for animals, will absolutely LOVE this book! It is the perfect example of how a 4th grade teacher, her husband and family, and an amazing group of grade-schoolers leveraged their passion, knowledge, skills and talents to change the world one heart at at time! And it provides so much inspiration for others to do the same!

When you get your copy, you’ll hear all about that day at Allyn Finch Intermediate School, and the weeks, months, and challenges they faced ahead to make their mission of helping every animal find it’s way home.

LAKESHIRE PARK

When the month of March came striding in, bringing with it the first tender shoots of a green spring, romance came to mind, so I picked just the thing for my book club, Lakeshire Park, by Megan Walker, a lovely little romance set in Brighton, England, in the year 1820.

Two sisters, Amelia and Clara Moore, are about to find themselves without means or home… so what’s a girl to do back then but conjure a white knight - or at least a suitable bachelor - to sweep her off her feet and into stable circumstances? Join the sisters on their quest while rooting not only for them to find a roof over their head but, (dare we suggest it?) loving partners as well!

I loved reading romance novels when I was young, and I’m glad my girls can pick up a book like Lakeshire Park, and enjoy the historical details, the interesting characters, and the “happily ever after’s” without being subjected to much of the graphic nonsense that’s floating around out there these days.

HOME SWEET HOME

I know that the idea of shopping right now is enough to create an extra layer of stress to an already intense time of anxiety and worry. That’s why I made all the recommendations on my Mother’s Day Musts list available via on-line shopping.

I also understand if economic concerns make gift-buying not much of a reality for you right now, and if that’s the case, I promise you that a handful of pretty posies and a handmade card, delivered on a breakfast tray with toast, jam, and steaming cup of coffee or tea will send the message to the mother in your life that she is special, loved, and honored. So gifts, or no gifts, I encourage you to make this gesture.

If your circumstances allow for some discretionary spending, I stand behind my recommendations and the many companies with conscious with whom I partner. Pampering products, home decor, jewelry, and books are all things the revered women in our lives love and deserve when possible.

To all mothers and women who have made a difference in a child’s life, I thank you and wish you a very special Mother’s Day.

Hot Cross Buns

thumbnail_image0.jpg

Easter Sunday is April 12, and not even the coronavirus can stop the holiest of holy days from arriving and blessing our lives! It will definitely be celebrated differently this year, no church services or community egg hunts, but perhaps the season will be even more meaningful, as we have been given (forced!) time to pause and to praise.

We will worship as a family, have a small egg hunt in the yard, and eat together. Of course there will be deviled eggs, and this year, thanks to a little inspiration from my niece, Charisa, we’ll all enjoy a traditional hot cross bun, with the non-traditional twist of chocolate chips instead of raisins or currants (which I would prefer, but my children will definitely like these better!)

These orange flavored spiced buns, loaded with treats, and marked with the sign of the cross will be a welcome addition to your Easter meal, whomever you’re enjoying it with, even if it’s just you! Enjoy!

INGREDIENTS:

For the dough:

Screen Shot 2020-03-31 at 11.30.14 AM.png
  • 4 cups all-purpose flour

  • 2 and 1/4 teaspoons fast-acting yeast

  • 1/2 cup sugar

  • 1 teaspoon ground cinnamon

  • 3/4 cup chocolate chips

  • 1 cup milk, warmed

  • 1/4 cup unsalted butter, melted

  • 1 large egg

  • 1/4 cup orange juice

  • Zest of 1 large orange

For the crosses:

  • 1/2 cup all-purpose flour

  • 1 tablespoon sugar

  • 1/4 cup water

For the glaze:

  • 1/4 cup sugar

  • 1/4 cup orange juice

DIRECTIONS:

  1. In a large bowl, whisk together the flour, yeast, sugar, and spice. Stir in the chocolate chips.

  2. Make a well in the center of the mixture, and add the milk, butter, egg, orange juice, and orange zest. Mix well, then bring everything together with your hands to form a sticky dough.

  3. Transfer the dough to a lightly floured surface, and knead for about 5 minutes until smooth and elastic. Place the dough into a lightly greased bowl.

  4. Cover with plastic wrap and leave to rise in a warm place for 1 hour, or until doubled in size.

  5. Divide the dough into 12 balls. Place them in a greased 9×13-inch baking pan, cover with plastic wrap, and leave to rise in a warm place for another hour, or until they are touching and doubled in size. (Coating the plastic wrap on the side touching the buns with cooking spray will help prevent sticking.)

  6. For the crosses, whisk together the flour and sugar. Stir in the water until smooth. Place into a piping bag (use a zip-lock baggie with the corner snipped away) and pipe crosses over the buns.

  7. Bake for 18 – 20 minutes, or until risen and golden brown.

  8. For the glaze, gently heat the sugar and orange juice in the microwave until the sugar has dissolved. Brush the glaze over the hot buns, and serve warm.

10 Million Hope Masks Challenge!

Screen Shot 2020-03-30 at 12.06.50 PM.png

Hospitals and clinics across America are anticipating a shortage of Personal Protective Equipment (PPE), as the number of COVID-19 patients rise. I am asking everyone that may have a store of much needed PPE’s to please donate them to a local clinic or hospital!

These include:

  • Masks

    • N95 masks (clinical or industrial)

    • Surgical masks

  • Face/eye protection

    • Face shields (medical grade)

    • Goggles (medical grade)

  • Gowns

    • Isolation gowns

    • Surgical gowns

    • Tyvek suits

  • Gloves

    • Examination gloves

    • Surgical gloves

PPE’s are commonly used by businesses in manufacturing, construction, oil and gas, industrial clean-up, and many more.  For example, paint spraying, wood-working, metal working ( such as welding, sanding/polishing,) machine or auto maintenance, general industrial clean-up and processing including abatement/remediation, agriculture, and those that work with herbicides and pesticides, house cleaning, spas, hair, and nail salons. All of these businesses purchase and utilize PPE’s that are sorely needed back in the medical community to protect our healthcare workers!

If you, or anyone you know, has access to a quantity of these items, please please please get them to where they will do the most good right now. Your stock can be replenished when the coronavirus pandemic has subsided and we are back to some semblance of normality.

And, if you are associated with any type of manufacturing that could produce these items, I so hope that you will! My brother has temporarily suspended normal operations of his metal fabrication business to make face shields. I am so proud of him!

If you do not have access to PPEs, and are not in the manufacturing sector, you can still help!

Join me and thousands of others across the country in sewing cloth face masks and donating them to the medical community. I’m calling upon all my listeners to help me in my Hope Masks efforts!

In addition to providing masks for the medical community, there are several encouraging reports demonstrating that face masks worn by the general public can help slow the spread of the coronavirus. The age-old advice of “cover your cough” is something I feel we should all be taking, and encouraging others to do the same.

Because one can be contagious weeks before noticing any symptoms, or in fact, without EVER becoming symptomatic, treating ourselves as potential carriers is a wise practice. So, make masks for yourself and your family members too, wear them when venturing out to the grocery store or other public places. Choose a fabric that you love and rock those masks!

Instructions from Deaconess, with a pattern from The Turban Project,*
and How-To video can be found HERE.

And a tutorial created by JoAnn Fabrics can be found HERE.

With all my girls and my mother-in-law helping with the effort, we’ve been able to make over 100 masks in less than a week. It’s an activity that has brought us together for conversation, laughter, and skill building, all in an effort to help others.

Having something meaningful to do with your hands and heart is good for you and those your efforts will support!

Bacon & Cheddar Doggie Biscuits

IMG_8088 2.JPG

In the midst of all this holiday cooking and gathering around our friends and family, let’s not forget about our furry friends!

When it comes to doggies biscuits, I tend to stick to simple and whole food recipes to ensure my pals are getting tasty and nutritious treats!

And when one of my lovely friends sent me photos of the treats she just made her pups I HAD to share them, (with permission of course!) Luckily, she loves to document her recipes through photos and agreed to send them my way! She also confirmed that they were DEVOURED, because they were so yummy!

Here’s the recipe and instructions so you have something to share with your four-legged “fur babies.” No pets of your own? Your friends and neighbors will be touched if you were to gift some to theirs!

IMG_8092.JPG

Ingredients:

  • Oat Flour - 3 Cups

  • Bacon (cooked and crumbled) - 8 Strips

  • Shredded Cheddar Cheese - 2 Cups

  • Eggs - 4

Directions:

  1. Preheat oven to 350 degrees Fahrenheit

  2. Add oat flour, bacon, and cheese to a food processor and combine until the ingredients reach a crumble like texture.

  3. Then add your eggs

  4. Mix

  5. Sprinkle flour out onto flat surface and roll the dough out until it is about 1/4 inch thick. Using the cookie cutter of your choice (I used little stars) begin to cut dough into desired shape.

  6. Transfer treats onto a baking sheet lined with parchment paper

  7. Bake for 20 minutes

  8. Let cool and then store in your favorite container!

Depending on the size of your cookie cutter this recipe can make 3-4 dozen treats!

“I hope your fur babies enjoy these yummy treats as much as mine did!”

A Season of Generosity | Giving Back

I was taught from the time I was a small child that the holiday season is the time for giving, which is why I’m calling it the Season of Generosity.

My parents loved this time of year; my dad spent hours in his wood shop and my mom’s sewing machine seemed to never stop humming. There was always something baking or simmering on the stovetop.

IMG_3400.jpg

They not only created most of the gifts my siblings and I found under our tree, but there were also piles of baskets and boxes stuffed with gifts and treats that went out to countless friends, neighbors, and coworkers.

level of softness

Simple and heartfelt gestures:

  • Volunteer to watch someone’s children for a few hours so they can do some shopping, prepare some meals, work on holiday projects.

  • Treat your co-workers with some home-baked goodies or a big bowl of fruit to help keep immune systems healthy through the winter months.

  • Make some home-made doggie treats and give them out to dog-walkers passing by.

  • Do you sew, knit, or crochet? Those are some mad skills! Put them to use making hats, scarves, blankets, and booties - give to loved ones or donate to organizations that will distribute to those in need.

  • Create spa-like baskets for the overworked ladies in your life! Add a candle, some bubble bath or bath bombs, scented soaps or lotions, mani-pedi tools, a fluffy loofa - all items can easily be found at your local dollar store but come together to create a luxurious gift item.

  • Volunteer! How ‘bout some of these Nationally recognized places??? Anything spark a passion with you?

  • And if you find that you have just a little something in your bank account that you’d like to bless someone with, consider making a donation to a charitable organization of your choice. (Might I suggest Point Hope - a voice for forgotten children?!)

Donations to one of these groups will help put gifts under to tree for children that wouldn’t otherwise have one to unwrap. i

I hope you find the joy in giving back this season! There is so much to be thankful for, and I am beyond thankful for all of you, my listeners, my readers, my supporters!

If you have more ideas for ways to give back please share them in the comments section or visit me on my Facebook or Instagram (@radiodelilah) pages and comment there.

Happy Holidays my friends!

I’ve included an autographed copy in each of my 12 Stockings this year with the hope that you will enjoy it and it will inspire you to reach out and help me change the world. All we need is love and a heart that is willing to serve.

Christmas Music is Here!

Screen Shot 2019-11-14 at 12.44.21 PM.png

Oh my word, how I LOVE Christmas!

The Delilah show has been Your Christmas Station for several decades now, and along with the tried and true (and able to sing-along-to) carols we all know and love, I’m like a kid opening their stocking when I gleefully unwrap all the newer holiday tunes of the season.

Sometimes, through the beautiful instruments, harmonious melodies, or humorous lyrics, I become so entranced and drawn into the spirit of the music, my ears almost pick up what I think to be the prancing and pawing of each little reindeer hoof, gently alighting upon my rooftop. Do you hear what I hear?

Here’s a run-down of some of the best newer Christmas music - I recommend you add them all to your Christmas play list!

Kacey Musgraves: A Very Kacey Christmas

Some thought it early in the game for country sweetheart, Kacey Musgraves, to release a holiday album in 2016, but the collection has proven to be anything but premature! In fact, it seems like it could have been something we all grew up with, alongside the silvery tinsel and chunky Christmas tree lights with half the paint missing from each bulb.

Kacey blends classy with kitsch on this already beloved and very nostalgic holiday endeavor. If you’re anything like me, you’ll love Christmas Don't Be Late, A Willie Nice Christmas (featuring Willie Nelson and Trigger) and Ribbons & Bows.

But don’t take my word for it. Read more about A Very Kacey Christmas HERE then purchase it for your own collection!

Idina Menzel: A Season of Love

You may be familiar with Idina Menzel because of her iconic role in Frozen and that ONE song that’s been in our head since it’s release, Let It Go… But here’s another reason to get to know this super talented actress and songstress, she’s released a Christmas album with a whopping 18 tracks to it, including several duets with folks such as Ariana Grande, Billy Porter, Josh Gad, and her talented hubby, Aaron Lohr.

The duet with Ariana, A Hand for Mrs. Claus, is an original, written by the composers of the Frozen soundtrack, Kristen Anderson-Lopes and Robert Lopez. It puts me in a cookie-baking mood for sure! I’m equally impressed with the new song by Idina, At This Table, that she wrote with Jonas Myrin. It’s all about celebrating diversity and embracing those different from us during the holiday season!

A Season of Love also includes classics like, The Most Wonderful Time of the Year, Ave Maria, and I’ll Be Home For Christmas, as well as many new numbers that will wrap you in the spirit of love all season long. This is a must have for your collection!

Matt Nathanson: Christmas (Baby Please Come Home) & River

Bay Area singer songwriter Matt Nathanson is a delightful and insightful guy that’s a BIG favorite of a family member who introduced me to his music. He’s just released a couple of singles that deserve our attention: Christmas (Baby Please Come Home,) and River. I love both, and am sharing HIS thoughts about these songs and what they mean to him, because it so perfectly captures his spirit and provides a compelling reason to give them a listen!

“The first time I heard Christmas (Baby, Please Come Home) was U2’s cover of it for the A Very Special Christmas charity album. I loved how the song felt like a celebration, but had this thread of sadness and longing running through it. For me, the holidays have always felt like that. Friends and family coming together at the end of the year, the beauty and starkness of winter contrasted with all the warmth of togetherness, joy and longing… This song is magical like that. It captures it all.”

and…

”Joni Mitchell is one of the greatest songwriters we have. A treasure. And this (RIver) isn’t a holiday song, per se, but it's become one over the years. Whenever I hear it, I’m immediately transported to the time and place she is singing about; Los Angeles in the 70s, bouncing off the superficial and the never-changing seasons… longing for a move back home, to the place she grew up and the ease and simplicity of youth.”

Get to know Matt, you’ll be glad you did!

John Legend: A Legendary Christmas

Swoon-worthy and critically acclaimed, multi-platinum singer-songwriter, John Legend, released his first Christmas album, A Legendary Christmas last year so it’s still “new” to me and probably many of you as well.

Some of my favorite tracks are What Christmas Means to Me, with the legendary Stevie Wonder playing along on his harmonica! The magical, Christmas Time is Here, and the fun, Purple Snow Flakes, which became Delilah Jr’s favorite the second she heard it! (Can you guess her favorite color?!)

Be A Star - With Star Fruit!

thumbnail_IMG_4632-1.jpg

Be the star of the show this holiday season with Star Fruit!

Here’s a tip for dressing up your holiday dishes; Star Fruit!

starfuit1.png

You've seen it in on your grocery aisles, maybe even purchased it to satisfy your kid's’ curiosity, but if you lead your holiday meals with this bright gold star, you'll be considered a true wiseman!

Carambola, or Star Fruit, is native to Indonesia but is now cultivated in many tropical areas. It's about 2-6" long and when ripe it's a deep yellow color. Most of the fruits have 5 ridges, giving it a classic star shape, but some can have more or less. The skin is thin and waxy and may be eaten, just like that of an apple or plum.

Starfruit 2.png

There's no special preparation to eating - just wash, then slice it up as thick or thin as you desire, and remove the seeds.

Use it on your salads - like the spinach, red onion, pomegranate, and star fruit example here. Or in your traditional fruit salad. On your cheese platters, to dress your ham alongside the pineapple, and in your jello-treats.

It's mild flavor, both sweet and a tart, make it a complementary companion to just about every thing on your holiday buffet!*

So go ahead, be the star of the show with star fruit!

* Star fruit should not be consumed by people with kidney disease or on dialysis and can interact with prescription medications much like grapefruit. Do your research if you have any questions!

Tomato Basil Bisque

Screen Shot 2019-10-23 at 2.05.14 PM.png

Fall marks the beginning of soup season in my house (for just about everyone else I know too!) and I’m always looking for new recipes to try.

This week, our studio engineer, Jessica, brought a delicious looking bowl of soup into work with her for lunch… It smelled so good as she was reheating it, I had to know what was in it! (I also might have begged a taste…)

Turns out, not only is Jess super bright when it comes to audio engineering… she’s a great cook too! This is a yummy example of a simple, but absolutely fabulous tomato basil bisque that she makes often through the chilly months. I had her forward the recipe to me so I could share it with all of you.

Jessica roasts her own Roma tomatoes, because it’s a fairly easy process. But if you want to whip (blend?) this together quickly, you can pick up a few cans of fire-roasted tomatoes in your grocery aisle.

Jessica’s Tomato Basil Bisque

Ingredients:

  • 1/2 onion - chopped

  • 1/4 cup plus 2-3 tbsp olive oil

  • 4 garlic cloves - minced

  • 20-22 Roma tomatoes, roasted (or 2 cans fire roasted tomatoes)

  • 1/2 package (4oz) cream cheese

  • 2 cups chopped fresh basil leaves

  • 1 cup of half ‘n half

Directions:

  1. Roast tomatoes with olive oil ahead of time using method described below soup instructions.

  2. Cover bottom of stock pot with 1-2 tablespoons olive oil. Place over medium heat.

  3. Add chopped onion and cook until translucent. Add minced garlic and cook about 5 minutes, stirring constantly until garlic begins to brown.

  4. Add the roasted tomatoes*, basil, and cream cheese at this time, and bring to a low boil. If it is looking dry, add about 1/4 cup of water so that the mixture does not scorch.

  5. When the cream cheese has fully melded with the other ingredients remove from heat and allow to cool slightly.

  6. Using an immersion blender, blend in the pot until the mixture is smooth and creamy. Bring up heat once again, and add half ‘n half (or reduced fat milk.) Let sit for about five minutes stirring occasionally then serve.

  7. Garnish with a dollop of sour cream and a fresh basil leaf.

* To roast tomatoes: Cut off stem, slice tomatoes in half lengthwise. Arrange cut side down on baking tray and drizzle with olive oil. Place under broiler for about 15 minutes; remove tomatoes once charred spots start appearing. Let cool, chop coarsely, retaining as much of the juice as possible.

Thanks for sharing your recipe with us, Jessica!

"Waffle" Cake - Fun to Make!

thumbnail_IMG_4001.jpg

Recently, Producer Leisa ordered a “waffle cake” from a local maker for a special celebration in her home and showed off photos of this special creation. All of us in the studio were intrigued. What in the world is a waffle cake?!

Turns out, it’s exactly what it sounds like; waffles made from cake batter, stacked and iced, to make a cake! A new food trend we could definitely all get behind. Who doesn’t love waffles? Who wouldn’t want a reason to eat them mid-day or in the evening, smothered in icing?!

So we did a little research (i.e. we “Googled it”) and discovered that you can put almost any kind of batter in a waffle iron… think waffle, banana bread, chocolate cake… yep, it all works! Why did it take so long to think this up?

Leisa had ordered a strawberry cake with raspberry icing, it came gorgeously decorated with natural flowers and dusted with powdered sugar. The studio folks decided to take matters into their own hands this week and celebrate fall - any excuse for cake, especially if it’s a waffle cake!

They decided on carrot cake with cream cheese icing. Here’s the result recipe and the directions. It turned out OH SO GOOD and OH SO PRETTY!

Carrot Waffle Cake with Cream Cheese Icing:

Ingredients:

For the Carrot Cake:

thumbnail_IMG_3983.jpg
  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 3/4 cup or vegetable oil

  • 4 large eggs room temperature

  • 1 and 1/2 cups light brown sugar

  • 1/2 cup granulated sugar

  • 1/2 cup unsweetened applesauce

  • 1 teaspoon pure vanilla extract

  • 3 cups grated carrots, lightly packed

For the Cream Cheese Icing:

  • 1 (8-ounce) package brick style cream cheese, softened to room temperature

  • ½ cup unsalted butter, softened to room temperature

  • 2 cups powdered sugar

  • 1 teaspoon pure vanilla extract

Instructions:

For the Carrot Cake:

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined. Set aside.

  • In a separate large mixing bowl, whisk together the oil, eggs, brown sugar, granulated sugar, applesauce, and vanilla extract until fully combined. Add the grated carrots into the wet ingredients and mix until well combined.

  • Pour the wet ingredients into the dry ingredients and mix with a whisk or rubber spatula until just combined, making sure not to over mix the batter.

  • Coat the two sides of a waffle iron with non-stick cooking spray, and heat. Working one-by-one, pour enough batter into your iron to make a waffle. Cook until done through but not overly browned. Transfer onto a wire rack to cool. Repeat until you have 4-5 waffles to stack.

For the Icing:

  • Place cream cheese in a medium bowl and using a hand or stand mixer, beat until smooth. Add the butter and mix until well combined. Add the vanilla extract and the powdered sugar a little at a time, until fully combined and creamy.

Assembly:

  • Choose your serving plate and place the first waffle in the center. Add a generous amount of icing to the top of the waffle and spread to the edges, place another waffle on top, and spread more icing on it. Repeat until you have the desired number of waffles, and height of cake.

  • Do not ice the top waffle - instead, place a dollop of icing in the center and garnish the stack with flowers (or whatever your creative spirit directs you to do) and sprinkle with powdered sugar!

It was recommended to us that the cake be allowed to absorb the moisture from the icing for at least 24 hours (or longer) before eating. This one was baked on a Friday, then garnished with edible Nasturtium blossoms, and enjoyed on Monday. It was DELICIOUS!!!

What flavor combinations might you try? I’m thinking banana or zucchini bread would also be good with the cream cheese icing, or maybe lemon cake with butter cream? Let me know if you try this and share your ideas of different flavors with me!

"Autumn"

Screen Shot 2019-09-30 at 10.27.47 PM.png

I recently ran across this beautiful essay, published by the UK’s The Manchester Guardian Newspaper in the year 1840. It was written by a contributing editor identified only as “Alison.”

I found it to be overwhelmingly emotive and befitting of the meloncholic mood I’m now in, with the changing of the summer season into fall, and as I approach the anniversary of the date my son, Zachariah, changed his address to “heaven.”

For as many seasons as I have left on the earth before our heavenly reunion, autumn time will fill me with mixed feelings of such sadness in the missing of my boy and such joy knowing that he is in the arms of Our Father.

I wanted to share it with you all, in the hope that you might find some solace in Alison’s words, just as I have.

Autumn

There is an "even-tide" in the year - a season when the sun withdraws his propitious light - when the winds arise, and the leaves fall, and nature around us seems to sink into decay. It is said to be the season of melancholy; and if by this word be meant that it is the time of solemn and serious thought, it is undoubtedly the season of melancholy; yet it is a melancholy so soothing, so gentle in its approach, and so prophetic in its influence, that they who have known it feel, as if instinctively, that it is the doing of God, and that the heart of man is not thus finely touched but to fine issues.

It is a season which tends to wean us from the passions of the world. Every passion, however base or unworthy, is yet eloquent. It speaks to us of present enjoyment; it tells us of what men have done, and what men may do, and it supports us everywhere by the example of many around us. When we go out into the fields in the evening of the year, a different voice approaches us. We regard, even in spite of our selves, the still but steady advances of time.

A few days ago, and the summer of the year was grateful, and every element was filled with life, and the sun of heaven seemed to glory in his ascendant. He is now enfeebled in his power; the desert no more "blossoms like the rose;" the song of joy is no more heard among the branches; and the earth is strewed with that foliage which once bespoke the magnificence of summer. Whatever may be the passions which society has awakened, we pause amid this apparent desolation of nature. We sit down in the lodge "of the wayfaring man in the wilderness," and we feel that all we witness is the emblem of our own fate. Such, in a few years, will be our own condition. The blossoms of our spring, the pride of our summer, will fade into decay; and the pulse that now beats high, with virtuous or with vicious desire, will gradually sink, and then must stop for ever.

We rise from our meditations with hearts softened and subdued, and we return into life as into a shadowy scene, where we have “disquieted ourselves in vain.” Such is the first impression which the present scene of nature is fitted to make upon us. It is this first impression which intimidates the thoughtless and the gay; and indeed, if there were no other reflection that followed, I know not that it would be the business of wisdom to recommend such meditations. It is the consequences, however, of such precious thought which are chiefly valuable; and among these there are two which may well deserve our consideration.

It is the particular character of the melancholy which such seasons excite, that it is general. It is not an individual remonstrance; it is not the harsh language of human wisdom, which too often insults while it instructs us. When the winds of autumn sigh around us, their voice speaks not to us only, but to our kind; and the lesson they teach us is not that we alone decay, but that such also is the fate of all the generations of man. “They are the green leaves of the tree of the desert, which perish and are renewed.”

In such a sentiment there is a kind of sublimity mingled with its melancholy; our tears fall, but they fall not for ourselves; and, although the train of our thoughts may have begun with the selfishness of our own concerns, we feel that, by the ministry of some mysterious power, they end in awakening our concern for every being that lives. Yet a few years, and all that now bless, or all that now convulse humanity, will also have perished. The mightiest pageantry of life will pass, the loudest notes of triumph or of conquest will be silent in the grave; the wicked, wherever active, "will cease from troubling," and the weary, wherever suffering, "will be at rest."

Under an impression so profound, we feel our own hearts better. The cares, the animosities, the hatreds, which society may have engendered, sink unperceived from our bosoms. In the general desolation of nature, we feel the littleness of our own passions; we look forward to that kindred evening which time must bring to all; we anticipate the graves of those we hate, as of those we love. Every unkind passion falls with the leaves that fall around us; and we return slowly to our homes and to the society which surrounds us, with the wish only to enlighten or to bless them.

If there were no other effects of such appearances of nature upon our minds, they would still be valuable, - they would teach us humility, - and with it they would teach us charity. In the same hour in which they taught us our own fragility, they would teach us commiserations for the whole family of man. But there is a further sentiment which such scenes inspire, more valuable than all; and we know little the designs of Providence when we do not yield ourselves in such hours to the beneficent instincts of our imagination.

It is the unvarying character of nature, amid all its scenes, to lead us at last to its Author; and it is for this final end that all its varieties have such dominion upon our minds. We are led by the appearances of spring to see His bounty and we are lead by the splendours of summer to see His greatness. In the present hours we are led to a higher sentiment; and, what is most remarkable, the very circumstances of melancholy are those which guide us most securely to put our trust in Him.

We are witnessing the decay of the year; we go back in imagination, and find that such, in every generation, has been the fate of man; we look forward, and we see that to such ends all must come at last; we lift our desponding eyes in search of comfort, and we see above us One “who is ever the same, and to whose years there is not end.’ Amidst the vicissitudes of nature we discover that central Majesty, “in whom there is not variableness nor shadow of turning.” We feel that there is a God; and from the tempestuous sea of life we hail that polar star of nature, to which a sacred instinct had directed our eyes, and which burns with undecaying ray to lighten us among all the darkness of the deep.

From this great conviction there is another sentiment which succeeds. Nature, indeed, yearly perishes; but it is yearly renewed. Amid all it’s changes, the immortal spirit of Him that made it remains; and the same sun, which now marks with his receding ray the autumn of the year will again rise in his brightness and bring along with it the promise of he spring, and all the magnificence of summer.

Under such convictions, hope dawns upon the sadness of the heart. The melancholy of decay becomes the very herald of renewal; the magnificent circle of nature opens up our view. We anticipate the analogous resurrection of our being; we see beyond the grave a greater spring, and people it with those who have given you to that which is passed. With such final impressions, we submit ourselves gladly to the dusting of our being. While the sun of mortality sinks, we hail the rising Sun of Righteousness, and in hours when all the honours of nature are perishing around us, we prostrate ourselves in adoration before Him who “sitteth upon it’s throne.”

Let, then, the young go out, under the descending sun of the year, into the fields of nature. Their hearts are now ardent with hope - with the hopes of fame, of honour, or of happiness; and in the long perspective which is before them, their imagination creates a world where all may be enjoyed. Let the scene which they now may witness moderate, but not extinguish, their ambition. While they see the yearly desolation of nature, let them see it as the emblem of mortal hope; while they feel the disproportion between the powers they possess, and the time they are to be employed, let them carry their ambitious eye beyond the world; and while, in these sacred solitudes, a voice in their own bosom correspond to the voice of decaying nature, let them take that high decision which becomes those who feel themselves tho inhabitants of a greater world, and who look to a Being incapable of decay.
