Pumpkin Cheesecake

Mmmmm. I haven’t made my annual skating in Central Park trip to New York now for a few years. I miss seeing all my East Coast friends, I miss the city that never sleeps, Broadway performances, window displays, and boy, oh boy, do I miss Junior’s sandwiches and cheesecakes!!!

This little number showed up on a holiday table recently and alllllmost scratched my cheesecake itch. (The flavor was there, just not the jostling crowds, noises, and endless energy found in the Junior’s dining room!)

It’s your basic graham cracker crust cheesecake recipe, all dressed up in fall finery with the addition of 15oz of pumpkin and her spicy companions we just can’t seem to live without.

Wow your family and your guests, or simply indulge yourself with this decadent little treat.

Ingredients:

Crust:

  • 1 1/2 cups graham cracker crumbs

  • 6 Tbsp unsalted butter, melted

  • 1 Tbsp sugar

  • 1 tsp cinnamon

Filling:

  • 3 (8oz) packages cream cheese, softened

  • 1 1/2 cups packed light brown sugar

  • 15oz canned pumpkin

  • 4 large eggs

  • 1/4 cup sour cream

  • 2 tsp pumpkin pie spice

  • 1/4 tsp salt

  • 1 Tbsp vanilla extract

Directions:

Preheat Oven to 350˚F.

Crust:

1. Use a food processor to pulse graham crackers to create fine crumbs .

2. In a medium bowl, mix together graham cracker crumbs, melted butter, sugar, and cinnamon. Dump into a 9” springform cheesecake pan and use a cup, glass, or large spoon to press the mixture down covering the bottom of your cake pan and pushing 1/3-1/2 of the way up the sides.

3. Bake at 350˚F for 8-10 minutes. Allow to cool before adding cheesecake filling.

Filling:

  1. In a medium bowl, beat the cream cheese and brown sugar on smooth (no lumps, bumps, or chunks!).

  2. In a separate bowl, whisk together pumpkin, eggs, sour cream, pumpkin pie spice, salt and vanilla extract. Add this well-combined mixture to the cheesecake filling and continue mixing on low speed just until uniform in color and consistency.

  3. Pour filling into pre-baked crust, place in oven on middle rack, and bake at 350˚F for 1 hour. Turn off heat, prop the oven door open slightly, and allow to cool for 1 hour. *

  4. Remove from the oven and allow to cool a bit longer, until the cheesecake reaches room temperature. Then cover and refrigerated at least 4 hours or overnight.

  5. Just before serving, remove from its springform pan (run a knife along the sides, then release the spring and remove the rim.)

  6. Serve with whipped cream and a sprinkling of cinnamon or pumpkin spice mix.

    *Note - If you are comfortable doing so, use the water-bath method to bake. Cheesecakes love moist environments and this will help to prevent the top from cracking and the center from falling. (If you’re NOT all that comfortable with water-baths, skip it!)

I loved the Netflix series, even though I know little about the game. Just as I thoroughly enjoyed this month’s pick, another spellbinding piece of historical fiction set during WWII.

A young Polish resistance worker, Maria Florkowska, is a political prisoner at Auschwitz who plays chess in exchange for her life.

After being captured by the Gestapo in Nazi-occupied Poland, Maria and her family are sentenced to death…but when a cruel concentration camp deputy realizes her ability to play chess, she is spared. He intends to use Maria as an opponent to entertain the camp guards, with the intention of eliminating her when he tires of exploiting her chess skills.

She endures her 4-year imprisonment by strategizing not only her chess moves, but also by making her captor a playing piece in her larger game of survival, healing, and revenge. As the war nears its end, she challenges her nemesis to one final game, certain to end in life or death, in failure or justice.

Christmas Music Musts!

One of the most exciting things about this time of year is the great selection of new holiday music releases!

We “flip the switch” on the Delilah radio program to all-Christmas programming earlier than most because I love the magical mood that Christmas music creates!

It’s the infusion of new music each year that makes our programming a fresh and welcome sound coming over the airwaves and spilling into your cars, your offices, and your homes, becoming a soundtrack to the memories you’re creating with co-workers, friends, and family.

And this year there are several albums full of fabulous additions to my playlist! I like to call them my “Christmas Music MUSTS,” that I just can’t wait to tell you about!

Kelly Clarkson is the first artist ever to top each of Billboard’s pop, adult contemporary, country, and dance charts. And there's a sampling of each of those genre's in her new album, “When Christmas Comes Around.

Rob Thomas has given yourself and someone like you (see what I did there?) a fun little gift this year, his first-ever Christmas album, Something About Christmas Time.”

Rob put a lot of thought into this 10-track compilation. It is a beautiful mix of new, like “Small Town Christmas” inspired by the picturesque community he and his wife live in north of New York City, old, with covers of Bryan Adams and Ray Charles recordings, as well as some lovely collaborations with friends; pop sensation, Ingrid Michaelson, gospel star, Bebe Winans, and country legend, Brad Paisley.

As the host of a dedication show, I appreciate that not every track is what you’d call “happy.” Christmas brings about the full range of emotions, and Rob’s new album speaks to them all. You can listen to Rob and I chatting about “Something About Christmas” and all kinds of other random topics on an upcoming December podcast episode!

We fell in love with all that is Darren Criss (multitalented musician, songwriter, stage & screen actor) through his various roles in Glee, Versace: American Crime Story, Hollywood, and others… and yet I’ve just found a whole new reason to sing his praises; his first full length album, “A Very Darren Crissmas.”

There’s no such thing as “enough” Christmas music! I get so giddy each autumn as new holiday albums and singles start falling like snowflakes… each one unique and magical, becoming part of a larger chorus of praise and celebration.

These are some of the best and you’ll want to get them before you set out to capture the perfect Christmas tree or take your first sip of eggnog!



Carrot Slaw

Putting dinner on the table during the darker months of the year always seems to be a rushed endeavor.

In the summer months when the sun is high well into the evening, and everyone is outside playing, I can move about the kitchen freely and holler for my family to come in when I’m ready for them. But now, it’s dark so soon after the kids get home from school that they are inside (often at the kitchen table doing their homework,) when it’s time to prepare the evening meal. The older ones often have things they need to hurry off to as soon as dinner is over and the younger ones need baths and bedtime routines. Can anyone relate?

I’ve got a few hacks to get a balanced meal on the table in a jiffy, and one of them is my mom’s carrot slaw.

Ingredients:

  • 3 large carrots, peeled and grated (about 3 cups)

  • 1 teaspoon apple cider vinegar

  • 1/2 cup raisins or dried cranberries (craisins)

  • 1/2 cup mayonnaise

  • 1 teaspoon salt

  • 1 Tablespoon sugar

  • (optional) chopped walnuts, pecans, or sunflower seeds

Directions:

  1. Peel and grate carrots,

  2. Place in large bowl and toss with vinegar.

  3. Add remaining ingredients and mix well.

  4. Serve immediately or refrigerate.

This comes together in a jiffy with ingredients most of us have on hand. It’s colorful and textural, a few things kids always seem to like, and it’s tasty!

Toss it together for a perfect pairing to roast beef or a roasted chicken, pork chops or round steak. (My folks used to tell me eating carrots would help me see in the dark… maybe that will help entice a little that is hesitant to try new foods.)

Pumpkin Spice - Ooh So Nice!

The season of pumpkin spice EVERYTHING is upon us!

It’s a season I love, not just for it’s spice blend, but that certainly makes it all the sweeter! The fall harvest is in, and there are a pile of sugar pumpkins begging to be make into treats: pies, loaves, muffins, bars, cookies, and so much more! And what do they all call for? Pumpkin spice!

If you buy the mixture from your grocery store it can be pretty spendy. So I like to mix up a big batch from the mix of individual spices I alread have in my pantry, its far more economical and oh so handy to have it at the ready whenever I have a hankering.

Divided into smaller portions, it also makes a great gift for friends and neighbors, perhaps accompanying a batch pumpkin treats!

Here’s what you’ll need to mix up a batch (of about 10 Tablespoons):

Ingredients:

  • 6 Tbsp. ground cinnamon

  • 4 tsp. ground ginger

  • 4 tsp. ground nutmeg

  • 3 tsp.ground allspice

  • 3 tsp. ground cloves

Directions:

  1. Mix to blend thoroughly

  2. Store in airtight container(s)

The Stolen Lady | October Book Club

For no particular reason, I’ve been drawn to stories that take place during the World War II era. I’ve always loved historical fiction, and there are quite a number of really good books available right now that are set during this period.

It was a time when the world hung by a thread and families nervously crowded around the wireless longing to hear news of victory. And it was a time when villains seemed easy to identify and heroes were plentiful too. A time of good and evil, victory and defeat, hope and despair… suspenseful and full of intrigue. Ok, maybe there IS a particular reason I’ve been drawn to this era - it so easily lends itself to rich and immersive reading material. I can’t seem to get enough!

Like this month’s pick. “The Stolen Lady” , by Laura Morelli, a stunning historical novel about two women, separated by five hundred years, united by their roles in hiding Leonardo da Vinci’s Mona Lisa.

Anne Guichard is a young archivist working at the Louvre in 1939, the dawn of WWII. Her daily life is thrown into upheaval as the Nazis draw near and a mad scramble to hide the museum’s precious artwork - including the Mona Lisa - begins. Her job in art preservation is now cloaked in fear and danger.

Bellina Sardi is a servant girl in a much earlier time. The year is 1479, and her mistress, Lisa Gherardini, the wife of a wealthy silk merchant, is to have her portrait painted by Master Leonardo da Vinci. This too was a period of extreme unrest, when the Florentines were rising up to overthrow the Medici family and their wealthy beneficiaries. Bellina becomes guardian to a dangerous and valuable secret.

Fans of historical fiction will love this! Those who appreciate art will love this! Anyone who has visited France, Paris, or the Louvre will love this! WWII buffs will love this! I can’t think of anyone who won’t love this!

Laura Morelli is a masterful storyteller and imbues her characters with optimism and hope despite the dangerous games of cat and mouse they are intricately immersed in. I found myself in a time machine bouncing between centuries and fearfully protective of The Stolen Lady.

COURAGEOUS Legacy

As a mother of a police officer, who is also an incredible father of four, this film truly touched my heart.

This is a 10th Anniversary re-release of the Kendrick Brother’s film, COURAGEOUS Legacy, and is another must-see. Celebrating 10 years of impact on families and fathers, the updated version of the film includes new scenes and an enhanced look and sound.

“Four men, one calling: To serve and protect. As law enforcement officers, they are confident and focused. Yet at the end of the day, they face a challenge that none of them are truly prepared to tackle: fatherhood. The Jesus Music

Contemporary Christian Music is as mainstream and available now as any other genre, but that is a fairly new phenomenon.

The Jesus Music, a dynamic documentary, unfolds the whole story, from it’s humble beginnings at the Calvary Chapel in Costa Mesa, California, and up through it’s many fits and starts, to become today what is recognized and celebrated as a multi-billion-dollar industry.

The film features some of my favorite artists, and people! Amy Grant, Michael W. Smith, Toby Mac, Lauren Daigle, Bart Millard, Joel Smallbone… and so many others who have dedicated their lives and their art to making music that unites people and honors God.

Music Notes | Lauren Daigle & ABBA

There’s a couple of music notes that I’m super excited to share with you this month!

A new inspirational single, “Hold On To Me", from Lauren Daigle, and an entire album we’ve been waiting almost 40 years for - “Voyage” from Swedish pop stars, ABBA!

Both have me excited for entirely different reasons. The first is from a young, fresh artist that provides inspiration for today, and gives me hope for our future. The second is from a well-seasoned much-beloved quartet that created much of the soundtrack of my youth. Their unique sound floods me with memories while their new music reminds me there’s no better time than RIGHT NOW to be doing what we love to do.

I’m so happy that both Lauren and ABBA love making music that makes people feel good!

The Slow March Of Light | September Book Club

I love books and reading for two main reasons, for the things I can learn, and the places (my imagination) can go! It’s works like my September Book Club choice that check both boxes!

The Slow March of Light, by Heather Moore, is an historical novel, based on a true story and inspired by actual events.

I was a toddler, living worlds away, when a wall of barbed wire was erected in the middle of the night, dividing one of the largest European cities, Berlin, into two very different countries; Soviet-occupied East Berlin, under communist rule, and West Berlin. Too young, and too far removed to wonder what that must be like.

But now, now I find myself lost in “what ifs.” What if I was a toddler living on one side of that wall? What if part of my family were on the other side of the wall? What if I was older? Would I risk my life and those that I love to do try and change our circumstances? What would that be? (“Of course,” my imagination says, “of course you would!”) But we all know imagination and reality are two entirely different things…

In our novel, Luisa Voigt doesn’t have to imagine a thing. It’s all too real for her. After the barbed wire goes up, her grandmother is trapped inside isolated East Germany; Luisa joins a secret spy network, whose mission is to smuggle those on the other side into West Berlin.

Bob Inama doesn’t either. A United States GI stationed in West Germany, he receives classified orders that place him on the other side secretly gathering intel to map out military targets. And then he is captured, imprisoned, and tortured. Thoughts of the lovely woman, Luisa, whom he met before his clandestine assignment, provide the glimmer of hope he needs to make it through each day of his confinement.

Told in alternating chapters, Luisa and Bob become endeared to me (and will to you!) and I drift away with them, vividly imagining myself in their situations trying to decide what to do next, and living through the drama of their stories.

Author Heather B. Moore has written a story that pulls you in, and like Bob’s imprisonment, doesn’t let you go until you’ve turned the very last page.

Back-to-School Blackberry Scones

For most of the country, school is going to be back in session - IN PERSON - at least as we begin this new school year. I don’t know about yours, but MY kids are ecstatic!

Gone are the moans and groans I’ve grown used to over the nearly 40 years I’ve been at this motherhood thing, and in their place is such joy and enthusiasm over in-classroom learning I’ve never seen before! It’s got me excited too! (Yes, I DO realize the learning aspect has little to do with the anticipatory glee - it’s all about seeing friends again!!)

If you still have some plump juicy blackberries hanging around begging to be picked before the falls rains set in (Oh please, oh please, we NEED the fall rains!) all you need is a cup of them to mix up a batch of these scones and make your kids first school morning even sweeter than they could have imagined! If you go the extra step and add the lemon glaze, you’ll be so glad you did! It adds a touch of sweetness and the citrus is a nice crisp contrast to the soft warm sconce.

There are two main points to remember when it comes to making scones - one, it’s ALL ABOUT THE BUTTER. The colder, the better! And, don’t over-work the dough; give it a light touch, pat gently into place before cutting into wedges.

Give ‘em a try!

Blackberry Scones with Lemon Glaze

Ingredients:

  • 3 cups all-purpose flour

  • 2/3 cup sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 1/2 cup butter, cold and cut into cubes or you can use frozen butter and grate it in.

  • 1 egg, beaten

  • 1 1/4 cups heavy cream

  • 1 cup blackberries

For the glaze:

  • 1 cup powdered sugar

  • zest and juice of 1/2 lemon (about 1 Tablespoon of each)

  • splash of cream

Directions:

  1. Preheat oven to 375 degrees F.

  2. Whisk the dry ingredients together in a large bowl: flour, sugar, baking powder, baking soda, and salt.

  3. Next, add the cold butter. A pastry cutter works great if you’ve used cold butter cut into cubes. If you’ve grated in frozen butter, just toss it to coat well. (All butter should be no larger that pea-sized.)

  4. In another bowl, whisk egg and cream together. Combine with dry mixture, and mix with a fork, just enough until dough comes together.

  5. Add the berries to the dough, gently turning into the dough, trying not to squish too much juice out of the berry.

  6. Turn out the dough onto a lightly floured surface and pat into a round shape about 1” thick. Using a sharp knife dredged in flour, cut the round into about 8 wedges of the same size.

  7. Transfer to a a parchment-lined baking sheet and bake for 25-30 minutes, until golden brown on top.

  8. Serve warm or continue with the next step to add a lemon glaze.

  9. While the scones are baking, make the glaze. Mix 1 cup powdered sugar with the zest and the juice of 1/2 a lemon. Add a splash of cream if glaze is not thin enough. (Conversely, add more powdered sugar if you want a thicker glaze.)

  10. Brush warm scones with half the glaze, wait until they have cooled a little bit (10-15 minutes) and brush again. Serve.

I’m about 30 pages into my August Book Club choice, The Merchant and The Rogue, by Sarah M. Eden, and it’s soooo good! (The book isn’t available until the 17th, but the publishers sent me a copy early!)

This is another one of the Proper Romance books I’m so fond of. I’ve shared a few of them with you before, if you’ll remember, Miracle Creek Christmas, Promised, Lakeshire Park

The Merchant and The Rogue, has the same sensibilities; historical detail (1865 London), intriguing plot line, fascinating characters, and nothing so risqué that you’d mind your teenager picking up and reading it themselves - in fact, you’d recommend they do so!

This is the story of Vera Sorokina, someone who loves reading the Penny Dreadfuls and all the adventure, mystery, and romance they contain, while her own life is relatively mundane working alongside her father in his book and print shop.

And it’s about Brogan Donnelly, an Irishman living in London, who coincidentally is a Penny Dreadful writer. He has a satisfactory life, yet still feels a bit lonely and much like an outsider.

It has all the right elements of a perfect romance - attraction, distrust, confusion, and a common threat this duo must work together to defeat, overcoming obstacles in their pathway to love in the process.

You might be asking how in the world I find time to read between my never-ending art installation, gardening, wrangling kids and grandkids, and radio work… but the answer is this, I ALWAYS find time to read! It is not so much one of life’s pleasures, as it is one of life’s necessities to me.

Losing myself in the pages of a good book - even if it’s just for 30 minutes or so a day, helps me to relax, unwind, and refresh. The Merchant and The Rogue does the job exceptionally well!

Oodles and Oodles of Zoodles!

Zucchini growers know this truth, there are always waaaaaay too many zukes.

Most of us end up resorting to a sort of “ding dong ditch” with our over-abundant harvest - we hang bags of them on neighbors doorknobs and fence posts, place them on car hoods, and we put them in mailboxes; anywhere we know you’ll find them and hopefully EAT them! They are gladly given “gifts” from the garden (and relief from the constant worry of “what do we DO with them all????”)

Fellow produce producers, I’m here to help. When you’ve baked your last zucchini loaf, broiled your last zucchini spear, fried your last zucchini medalian, zoodles is the answer to all your, “what do I do with them now?!” zucchini questions.

There are many different “zoodle” makers out there and prices vary, but most are under $20 and come with a variety of attachments that can be used with other veggies too. Find them at any store that sells kitchen goods (Walmart, Bed Bath & Beyond, Target, Fred Meyer’s, etc.) I love mine, and the kids get a kick out of turning the little crank handle and watching it spit out long twisting threads of zucchini noodles.

We quick fry them in hot oil and either eat them as a side dish, or sometimes I’ll add shrimp, chicken, or pork and it becomes a meal-in-one. It’s got none of the carbs traditional noodles have, and loads more nutrients and fiber, so I feel pretty good about eating them along side a thick slice of homemade sourdough bread. (How’s that for rationalizing bad behavior?)

The best part is, we can go through pounds and pounds of our prolific little problem and save our bewildered neighbors the consternation of what THEY are going to do with the dozens of donations they’re finding on their doorstep daily!

Here’s a quick recipe if you’d like to try it out:

Ingredients:

  • Oodles of zoodles

  • Enough oil to coat the bottom of a fry pan - I’ve been using avocado oil, but you can use olive, coconut, or sesame oil - whichever you prefer.

  • Your favorite seasonings; salt, pepper, garlic, or any ethnic blend. (I like to pair Tex-Mex with shrimp, Italian for chicken, and Asian with pork.)

Directions:

  1. Heat oil in a fry pan large enough to hold your portion of zoodles * Note - the zoodles will reduce in size by about 1/2, you may want to work in batches for a large serving.

  2. Gently drop zoodles in hot oil, so that you hear a definite “sizzle”, allow to brown/caramelize before turning - approximately 2-3 minutes.

  3. Season with your favorite mixture. It can be as simple as salt and pepper, or you may decide to spice things up a bit with garlic, cayenne pepper, or an Italian, Mexican, or Asian blend.

  4. Turn gently once or twice, until zoodles have become translucent and are cooked through - less than 5 minutes.

  5. Serve as a side or add grilled shrimp, chicken, or pork for a satisfying all-in-one main.

Your zoodles, your way. Oodles of ‘em! I hope you enjoy!

Island Queen

From what little I know of the colonial West Indies, a story about a woman of color who rose from slavery to become a wealthy and powerful landowner, would seem rather extraordinary. And that’s exactly what “Island Queen,” by Vanessa Riley is! Extraordinary.

Fresh Corn, Tomato, & Cucumber Salad

This colorful salad recently appeared at a family gathering.

Amongst delicious, but not the healthiest choices, (yes, I’m talking to you, bratwurst, Doritos, and potato salad!) it was a fresh, welcome addition to the early summer banquet table.

It’s easy to mix together, and you can adapt it to whatever you’ve got in the fridge.

Use the olive oil and vinegar you’ve got around. Regular, extra-virgin, rice, white wine, red wine, whatever. Try the recipe’s “secret ingredient” of Montreal Steak Seasoning (a dry mixture of salt, pepper, paprika, garlic, and who knows what) or substitute your favorite seasoning blend. Add avocado, rinsed and drained black beans, scallions if you don’t have red onion, mozzarella cheese, or feta crumbles… Add sunflower or roasted pumpkin seeds just before serving if that tickles your fancy. Your salad, your way.

Here’s the recipe for the one pictured!

Ingredients:

  • 1/4 cup olive oil 

  • 3 tablespoons rice vinegar

  • 3 generous tablespoons McCormick’s Montreal Steak Seasoning (or salt and freshly ground black pepper to taste)

  • 2 cans of whole kernel corn, drained, or 6 ears fresh corn cooked, cooled, and cut from cob (about 4 cups)

  • 2 cups grape or cherry tomatoes, halved

  • 2 large cucumbers, peeled, and diced

  • 1 large red bell pepper, seeds removed, diced

  • 1/2 large red onion, diced


Directions:

  1. Whisk together the oil, vinegar, and seasonings in a small bowl.

  2. Combine corn, tomatoes, cucumber, bell pepper, and red onion in a large bowl.

  3. Pour the vinaigrette over the veggies and toss to coat.

  4. Let stand for about 10-15 minutes then give a taste test and adjust seasonings if needed, adding salt, pepper, garlic or others (Italian blend) to your likings.

  5. Serve.

Fresh, light, and healthfully delicious. Go ahead and indulge in the other picnic favorites, but leave a little room on that flimsy paper plate for some of this goodness!

Memorial Day having been so recently commemorated, my thoughts and emotions have been with all the brave men and women who have served our country so valiantly, some paying the ultimate price for our freedoms.

These two books, both from the World War II era, seem the perfect match to my mood and musings, and perhaps to yours as well. Each are steeped in rich historical narrative and resplendent with tantalizing characters.

Go ahead, immerse yourself in the decadent delight of The Immortals & In Times of Rain and War, I won’t judge you because you couldn’t choose just one!

I’m especially fond of their Young Woodworkers Kit Club - a woodworking craft kit series designed for children from 7-12 years of age. Paul Adam is still a little young but he can complete many of the steps with a helping hand from me, Papa, or his older sisters.

He feels so proud when he’s finished a project - like this catamaran destined for the duck pond - and I know he’ll carry a love of woodworking and the skills he’s learning well into adulthood.
