Appetizer

Hedgehog Cheese Ball

A friend recently held a woodland animal themed baby shower for her daughter, and this little hedgehog cheese ball was the star of the appetizer table!

Start with your favorite cheese ball recipe. I’d use my mom’s go-to:

  • 8oz of cream cheese,

  • 1 cup of finely shredded cheddar cheese,

  • 1 teaspoon (or more) of garlic powder,

  • 1 tablespoon (or more) of Worchestershire Sauce,

  • and a couple of dashes of Liquid Smoke.

Combine until well incorporated.

Mom would have rolled it into a ball and coated it with chopped nuts before setting it out with crackers, but this little guy needs a snout.

For this prickly pardner, my friend tells me she put the cheese mixture into a thin plastic bag (the kind you use to bag veggies at the grocery store,) then shaped it; first into a ball, then slightly elongating one end.

Afterward, refrigerate for an hour or more until it’s firm. (Overnight or even a day or two in advance is fine too.)

When it has firmed up, remove from wrapping, and place on serving dish then press pecan halves into the cheese—beginning at the rear and working forward to the head—in a fan pattern. leaving space around the “head and snout”. She used dried currants for the eyes and nose.

Garnish with greens and veggies, maybe a button mushroom or two.

So stinkin’ cute!
It will look splendid on any fall or winter table!

Serve with crackers - but be sure to check on him a few minutes into the gathering, and if he hasn’t been touched spear a big chunk for your own cracker, because my friend tells me no one at the shower was willing to take the first serving!

*Note: I’ve seen a similar idea using pretzel sticks instead of pecan halves. This would be the option I’d need to use if my daughter with the nut allergy was present.

Melon Prosciutto Skewers

Summer is a time for backyard parties! You don’t even need to be celebrating anything more specific than the opportunity to gather outside under cloudless skies!

The next time you’re asked to bring something to share, consider these little tastebud tantalizers.

The sweet/salty combination will disappear so quickly, you’d think they were held together by a magic wand instead of a skewer!

Ingredients:

  • 10 small wooden skewers

  • 20 melon balls (or 20 cubes of melon) (about 1/2 of a cantaloupe)

  • 10 fresh basil leaves

  • 10 balls or cubes of fresh mozzarella cheese

  • 10 strips of prosciutto

  • * Balsamic Glaze for drizzling.

Directions:

  1. Cut melon in half, discard pulp and seeds, use melon baller to make 20 balls.

  2. Cut prosciutto in half length-wise to double the number of strips.

  3. Rinse fresh basil springs.

  4. Thread onto skewers in order of melon, basil, mozzarella, prosciutto, melon.

  5. Drizzle with balsamic glaze.

  6. Serve.

* Balsamic reduction/glaze is easily made by combining equal measures of Balsamic Vinegar and Honey. Heat over medium until mixture is reduced by half. Allow to cool then drizzle over skewers. (1/3 cup each is plenty for 10 skewers.)

Now that I’ve laid it all out for you, I’m going to pose a question… How delicious do you think this would be as a salad?

I’d make the melon smaller, by cutting the balls in half (or making smaller cubes), halving the fresh mozzarella, and tearing both the basil leaves and the prosciutto into bite sized pieces then combining. A drizzle of the reduced balsamic glaze just before serving sounds divine to me!

However you made it, I hope you’ll try this spectacular combination, it’s super yummy as well as being light enough for a perfect summer appetizer!
