1/3 medium cabbage, chopped
1 small onion, chopped
I large carrot, grated
1 Tablespoon olive oil
1/2 lb ground meat (beef, chicken, turkey, whatever you would like)
1/3 jar spaghetti sauce
1 cup instant rice (brown Minute rice)
Salt and Pepper to taste
Chicken broth or water
Brown the meat in the oil.
Add onion and sauté till tender.
Add carrot, cabbage, spaghetti sauce and enough water or stock to cover.
Boil until cabbage is tender.
Add to rice, stir, and bring back to boil.
Simmer until cabbage is cooked.
Makes 3 large servings. If you need more, just increase the quantities of everything. You can make it with Italian sausage, casing removed and cooked. You can also use regular rice, but it takes longer to cook.
