Elizabeth’s Easy Enchiladas

1 lb ground beef
1 small onion, chopped
1 pkg or can enchilada sauce
1 pk flour tortillas
2 cups shredded cheddar cheese

Preheat oven to 350. In skillet brown ground beef and onions until beef is evenly brown and onions are tender.
Prepare sauce as directed on package or can. Pour 1/4 cup into bottom of a baking dish.
On each tortilla shell place equal amount of beef and about 1 oz of cheese, leaving about 1/2 cup of cheese. Roll shell tightly and place seam side down in dish.
Pour remaining sauce over top of enchiladas and sprinkle with remaining cheese.
Bake for 20 minutes or until sauce is bubbly and cheese is thoroughly melted.

And I would add that you could include olives, diced chilies, corn or several other ingredients to add some frill to those enchiladas. Your easy dinners have been enticing and even entertaining so keep those recipes coming in! Write to me via D@Delilah.com.
