Toss in a slow cooker:
1 cup dried, uncooked pinto beans
1 cup water
1 – 16 oz jar (the small one) of your favorite jarred salsa, all of it
2 Tablespoons (less or more, adjust) chopped “chilies in Adobo sauce” (HOT! Use sparingly, but has this smoky yummy flavor so use some)
Mix well.
On top of that, layer:
1 ½ - 2 boneless, skinless chicken thighs, seasoned with salt and pepper
Then:
1 chopped red onion
1 large chunked green pepper (or red)
Cook on low for 8-10 hours. Remove chicken, shred and stir in. Serve with a fat dollop of sour cream and some chopped cilantro. Or top with Mexi-cheese.
