Zucchini soup. Cut up zucchs in cubes. Do not peel. Put olive oil in sauce pot and sauté onions and garlic, add can of crushed tomatoes, add salt, pepper, season to taste. Add zucchs and cook till al dente. Add parmesan. Mary

I made lasagna using zucchini instead of noodles. Slice large zucchinis lengthwise and do everything else like lasagna. It was great. Esther
