German Pancakes
 
Ingredients:
1/4 cup butter (or margarine)
1 cup flour
1 cup milk (I use 2 percent)
6 eggs - lightly beaten (I use 4 eggs)
1/8 tsp. salt
 
Preheat oven to 350 degrees. Melt the butter in a medium baking dish (I use an 8" square glass baking dish). You can set the dish with butter in the oven, to melt while you prepare the batter.
 
In a medium bowl mix flour, milk, eggs and salt. Pour the mixture into the prepared baking dish.
 
Bake on center rack, in the preheated oven, for 30 to 40 minutes, or until golden brown.
 
This light golden crepe is fabulous served with maple syrup or your favorite fruit preserves. It is amazing how the batter puffs up in the oven. Your kids and friends will think you are a magician! Gloria
