Slow Cooker Salsa Chicken
- 1 lb. frozen boneless, skinless chicken breasts
- 2 cans of black beans (not necessary to drain or rinse them, and you will need the juice).
- 1/2 c. brown Minute rice
- 1 16 oz. jar of Salsa
Chicken on bottom, then rice, then beans and salsa
On low for 6 – 8 hours.
Stir when you get home to break up the chicken. May serve as is, or on tortillas with all the trimmings...cheese, sour cream etc.
This is the simplest crock pot chicken I’ve ever made and delicious! Just four ingredients, no thawing necessary and great to do when you leave for work, only to arrive home with it done!
